Default 03 1500 temp gauge erratic engine misses when temp drops?

5.7 l the the never goes high say not even to 180 degrees, but it drops extremly fast to 100 and as soon as it does the engine hesitates , then the temp goes back up. And it will continuously do it. Coolant level is good and oil level. I also have heat.
Any suggestions?

It sounds like you may have a bad coolant temp. sending unit.

would that cause the engine to miss when it drops below 100?

yes. because the computer is thinking the truck is cold so it delivers more fuel (cold engine need more fuel) and when the engine in fact is not cold and warm (warm need less fuel) so it chokes.

I'm new to having a chevy, could you tell me where the coolant sensors located?

The temp. sensor is located at the front of the left cylinder head.
