Default 98 k1500 5.7 Starts and Dies

175,220 miles
Before I did lower intake manifold gaskets my oil pressure was good. No problems and it ran great with good power. After I did my lower intake gaskets my oil pressure was a couple marks lower than it was before. It was at 60 cold and is now around 45psi. It was at 20 psi warm and in park, around 15 psi now. Engine ran good no noticeable difference with the pressure lower. Every 1 out of 6 starts but not precise the oil pressure wouldn't shoot up on start up, the engine would stumble and stall. Crank the engine right after and would shoot up to 45 psi cold and would drive 20+ miles just fine. So I figured it wasn't the oil pump and was the oil pressure switch, so I replaced that and the oil pressure went back to normal! 60 psi cold 40 psi in gear. Took it for a 10 mile test drive everything seemed just right. Drove to school and when I went to start to go home oil pressure went back to 45 psi cold ran for about 5 seconds stumbled and died. So I expected it start up on the second try like it had the other times it stumbled but it just stalled again, and again. My thoughts were fuel pump relay but I can hear the pump running, I thought that because the oil pressure switch runs as a back up fuel pump relay if I understand right and maybe that was effecting oil pressure switch. Any thoughts are much appreciated thank you!
