Default bolt grinding

im in the process of removing bed of an 85 silverado. some of the carriage bolts are sized beyond belief. how should i go about cutting the bolt heads off? its only accessible on the top of the bolt heads so i cant cut it at the shaft. thinking of cutting a "X" into the top of the head. will this work?

Be careful not to cut into the bed itself. This tends to happen when doing this. I would suggest drilling into the center of the carriage bolt and drilling the head off.
