Default Full Truck Diagnosis

I own a 1981 Chevy Scottsdale, with an early 90' Chevy 350 (I don't know the exact year cause I haven't been able to locate the engine code) and I believe a 700r4 tranny, and its been a sort of a project truck for the past 3years. Since finance and time issues continually arise I've more or less just been fixing things as I am able, to keep it running. Eventually I do want to make this into something more than just a "fix and drive" vehicle I was thinking about trying to get a full run-down/diagnosis of the truck so that I know what I'm dealing with instead of finding a new "surprise" around every corner (though with automotive stuff things don't usually go exactly according to plan). So, how practical would this be? Do you think I could find a mechanic to do something like this? If so how expensive might it be? Thanks
