Hesitation on acceleration

Hesitation on acceleration
i have a 1995 k1500.
When im driving and i let of the gas to roll to a stop and then accerate again my truck hesitates. its almost like one of the plugs is missfireing.
Justg put brand new plugs and wires.
I put new exhaust on it took of the cat and the 02 sensor. could that be ?
