Default Water Temperature concerns

I have a Classic 2007, Silverado crew cab with 117K miles. After warmup the temperature gage has always stayed in the exact spot (at about 200 degrees regardless of operation). Recently I've noticed some small fluctuations and it appears to be now sitting at about 185-190 degrees. Is this a sign that the thermostat needs to be changed?
