Just wondering how to go about servicing the AWD in my 2000 Astro.

Sure you can. You'll need to crawl under the vehicle and pull the fill and drain plugs drain into a container. Then you refill it to the bottom of the fill hole. GM calls for ATF III fluid for the Astro AWD, but you could use Dex 4 or 6 or a "synchomesh" type manual transmission fluid IMO.
