The situation you describe just strikes me a unnecessarily dangerous for everyone. - - - I would not recommend towing either vehicle.
With a wife and two kids plus dogs:
Drive both vehicles out to Nevada - everyone will be much safer. If your wife can not, or will not, drive that far - pay a friend to help you drive the vehicles out there - and then fly him back home.
On the highway both vehicles are capable of getting 16-18 mpg or better, towing with either will reduce your mileage to 9-10 mpg. The total cost of fuel will not be significantly different.
End of July to early Aug. there can be severe storm fronts moving across mid-America. Both vehicles that you have, have relatively short wheel bases and are relatively light weigh. Towing one with the other is OK for short distances - but in bad weather - you really want a longer wheel base on the tow vehicle, and you really want the tow vehicle to be 60% of the total or combined weight. The capability to tow something, is quite different than keeping control in cross winds or the ability to STOP.
Unless you have a lot of experience towing - keep in mind that backing a trailer up when you get yourself stuck in a situation that you can't pull forward - - is a very nerve racking event.
Far - Far - Safer for everyone to have one Driver, One Child and One Dog in each vehicle. Just get a good short range two-way radio to keep connected along the way.
