Exclamation 95 chevy caprice

Hi i am new to this forum.
I have a 95 chevy caprice and i replace the gas pump,filter,distru,cap,rotor,wires,spark plugs,throttle postion sensor,ignition module,igition coil,water pump,thermostat,coolant sensor and battery. When i drive in the expressway for 15 min the car completely turns off and it won't start right away i have to wait for 2 min and then it would start and i have take the street and it won't turn off there.today my check enging came on and it read coolant sensor low. what does this mean?

Could be the coolant temp sensor for the ECM not the gauge. Maybe it is saying it's overheating and shutting off.
