You could try pulling the fuse if there is a separate one for the OnStar module. The surest method would be to disconnect the antenna.
If you are worried about them tracking your movements then you need to pull the battery on your cell phone because Google is tracking you 24/7/365.

When I got my last Samsung phone about a year ago, they did not even have any new ones available with replaceable batteries. This was at the T-Mobile store so there may have been one available somewhere else.
