Talking Please help me understand my BEAST engine!

I recently bought a new-to-me 1993 Chevy 1500. Just a cute little half ton, but low and behold this thing has a freakin 350 in it OOEEE! Rad. However, my Chevy know-how only goes up to a 4.8L so I need some education on my 5.7L V8 please. The guy I bought it from said it needs fuel injectors.....does my truck have a throttle body? Carburetor? Where in the sam-hell is my fuel injector that needs replaced?
**The Issue at Hand**
The problem I am trying to solve is a failed smog test, burning pretty darn rich, lots of un-burnt fuel in my exhaust. When I'm being light on the gas peddle/the RPMs are real low, it bogs pretty good. Occasionally, if I hit the gas peddle too aggressively, it misses.

I have repaired or replaced;
spark plugs and wires
cap n rotor
fuel pump and filter
radiator and thermostat

Please note. The wiring in this vehicle is not ideal. The previous owners wired it for a sound system (I also can't get that to work) and the wiring harness behind the dash looks slightly, not terribly, spliced up. I know very little about electrical other than how to chase down a short. Is this a possible reason for my issue? I still really appreciate the breakdown of my engine's fuel system but if wiring is the issue, I may as well sell the beast now....</3
