Default carbed V8 conversion in 95 1500 truck

First off, new to posting on the forum but have been reading on here for a while. I am Planning on a carbuerated V8 swap into a 95 Chevy 1500 with a 4.3 V6 with auto. Guess my biggest question is about going from F.I. to carbed, issues like gauges & any controls that may be lost when pulling out the original? I have done a couple s-10's & know of some issues with them especially with the later modesl (granted those are a little different due to more advanced electronically controlled) I am planning on replacing the engine with a built 383 stroker & will probably replace the transmission (planning on a 4l60 but may stay with the 700R4) Am looking for any tips or help that I may be able to get before I dig into this.
