Default gains from aftermarket mass air sensor for a 5.3

Hoping somone can explain the benifit, imprtance of changing out my mass air flow sensor?I recently freshened up the top end of my motor; re cut the valves, wetook .005 off the heads just to flatten, replaced the stock exaust manifolds with a set of Eldabrock ceramic headers and added a Gibson cat back exaust and installed a K&N filter much to my disapointment after reading reviews!!! however I was instructed this was pointless unless I change out my MAS and bought a programmer. So here i am looking for a little more information.
