Default Truck "bucking" in between 40-50 mph...

I just changed the spark plugs and gapped them to .055 and now I am noticing this when driving in the 40-50 mph range. Is the gap correct or could it be something else? It almost feels like a tranny slip but I don't think it was happening before I changed the plugs.

What year is the truck? What size is the engine? What brand plugs did you use?

Sorry 1996 Chevy Silverado 5.7 Vortec Z71 4x4 and cheap NGK G-Power Platinum plugs.
