2002 Suburban dies while driving, but only under certain conditions

We have an 02 Suburban that for the most part has no issues, except one, that occurs only when the outside temp gets over 75(since we're in northern Minnesota, that's summer for us). Starts and runs fine for quite a while. But on longer trips, over a couple hours/150+ miles that's when the trouble starts. If you try to accelerate too quickly, or have the cruise on and it kicks in going up hill, it chugs out and dies. It's not overheating, oil pressure is good, although I've recently noticed the needle on the oil gauge shaking occasionally, not when it's about to die, just other random times. You just feel it start to chug out and when you pull over and apply the brakes, it dies. Wait 15-20 seconds and it starts right up. Depending on how hot it is outside or how far you've driven, you might go another 50 miles before it happens again or it might just be 5 miles. We've done regular maintenance, oil changes, etc. Just changed plugs and wires and fuel filter. It NEVER happens in the winter, no matter how far we drive. Any idea what it might be? No one around here seems to have a clue, say they've never heard of such a thing happening. Thanks!

How many miles on it?
Have you ever replaced the fuel pump?
Do you run the tank down to empty frequently? The gas helps cool the pump.
Sounds like the fuel pump might be overheating?
