Engine hot A/C Off repeated issue

Engine hot A/C Off repeated issue
I have a 2008 Tahoe Hybrid 6.0L
every time I go on a highway the A/C disconnects, the Hybrid system function will be limited, the temp. gauge drops, the cooling fans will run at highest speed continuously, and the engine switches to V8 mode.
But the engine is not really hot say 180F, I changed the thermostat, the temp. sensor on the engine and the temp. sensor on the coolant radiator. I even changed the fan motor. But all in vain ... the error keeps coming back.
All I could do is to disconnect the battery cable to erase the error and everything will be back to normal.
The thing is in nice weather its OK but when the temp. goes up to 40¬46 then its unsupportable !
Any idea what might cause this issue?
