Default Head Unit Upgrade

I am thinking of upgrading my current stereo deck. I have a 2002 Suburban LT w/ quad captain seats. I am wanting to install a AM/FM/CD/DVD Receiver with RCA A/V output and run audio/video to all four headrest monitors. Is this possible? Meaning all I need to do is switch out the deck and run the RCA cords (W/ video amplifier/splitter) to each headrest monitor? Can I bypass the factory amplifier and power the four door speakers straight from the deck?
