Since nobody had answered with specific to Cavalier info, I'll throw out a little generic info:

I don't know the specifics on a cavalier OEM shock, but if you are just doing springs, and don't cut or replace the bump stops, then the shocks should stay within their acceptable range (you do run the risk of hitting the bump stops more with lessened travel distance).
Note, acceptable, not ideal... you'll be outside of the normal operating range (or at least towards the end of the normal range) with a drop of 1"+, so it could wear out the shocks a little faster, and probably be a little harsher (but the lowering springs will have a higher spring rate anyway).

If you trim the bump-stop as well, then I would recommend replacing with different shocks. A good auto-parts store should be able to help you find a pair that are an inch shorter for steady-state/rest position, at a similar damping ratio.
Again, my info is generic, haven't ever worked specifically with a Cavalier.

Best of luck!
