Default Out of ideas..5.7 tbi runs better with coolant sensor unplugged

Truck dies after idling some and won’t hold rev, unplugged coolant temp sensor now it idles decent but will eventually die.

Replaced fuel pump, fuel filter, fuel pressure regulator, EGR valve, plugs and wires, cap and rotor.

could it be injectors?
