Default Thermostat?

I have a 1988 Chevy 2500K 4x4 3/4 ton pickup with 5.7 L 350 V8. I notice the temperature gauge does not rise above around 150 even after driving for 30 minutes or more and the Service Engine Soon light comes on by then too. Would that mean a new thermostat is needed and if so, which number between a 195 or 160. I’ve never changed one myself but hoping I can without paying someone.

with my 97 silverado, it was the engine block temperature sending unit for the gauge. I pulled the thermostat and tested it in water and it opened at 195 as it should.
