2004 Cavalier overheating in standstill traffic but fine otherwise
My engine doesn't run 'cold' and there is no moisture in my oil, ever. I've checked my mileage a number of times and it is always at or above what Chevrolet says it should be.
Many head gaskets have been blown by stuck thermos, with the cars ending up in a junkyard as a result. At the very least it's an expensive repair job for those who can't do this repair themselves.
Again, those living in cooler climates shouldn't remove them.

blown head gasket seem to be your big worry; if you 're scare you stat will stuck close; they have failsafe stats google it.
you have the same chance of blowing a water pump belt or chain tensioner and overheating
engineers want the thermostat in place. Even when the stat is open it acts as restriction that increases system pressure. This is improves flow to low flow areas and increases the boiling point of the coolant.

Guys like us, who keep an eye on what their cars are doing, know what to do when they stick. But many other people, especially females and the otherwise mechanically illiterate will blithely continue driving 'to get home!' and blow a gasket. It happens.
And yes, I'll go ahead and stick one back in and see what the difference is.

The only time running without a thermostat is better...is when the stat is stuck closed....but in no way is it a good idea to remove a properly functioning thermostat and run like this all the time.
You may be able to get better fans, but I don't think it's worth it, that's not hot enough to being doing any damage, just enough to worry you. Mine does this in the summer too, as soon as I get moving it cools down again, I've just been assuming it's because the radiator isn't getting as much air flow, since it's not moving. My fans are running, but there's only so much 19 year old fans can do in 90+degrees. It gets hot if it idles for more than 5 - 10 minutes depending on how hot it is outside. And honestly, I drive a cavalier, I don't have idle for 5-10 minute gas money and just turn my car off. It prevents it from getting hotter and saves gas.
