I have had similar issues with many older GM sedans. My issue was a car that drove fine around town, until I got it good & warm from highway driving, then as soon as I exited the highway, it sputtered & died and had to sit for 5 hours before it would start again. My issue was a clogged EGR valve assembly. They are not too bad to replace or fix. If you have a vacuum controlled EGR, you can remove it and see the round rod that comes out of the bottom of it. If it does not move by pushing it in & out with a screwdriver handle or table top, it has a carbon build up on the part of the rod you cant see. That is fixable by soaking it with penetrating fluid, then wacking the EGR down on a hard surface very squarly as to not damage it, then blow it out with compressed air. If that allows it to go up & down smoothly, then re-install it with a new gasket. If you have an electronicly controled EGR, you can test it without removing it. Disconnect the electrical connector & use a 9 volt battery with wire leads to touch the 2 outermost terminals on the EGR, listen for a clicking sound, do the test with the leads going to the outer terminals then swap ends to make sure it clicks in the other direction too. If not, you need a new EGR assembly. Always make sure to check the obvious things too, like vacuum hoses, fuses, coolant level & replace the thermostat just in case - cheap & easy. I hope this helps.
