Default ac off due to high engine temp

My 2013 Chevy Cruze is displaying the "ac off due to high engine temp" in the dash. I have replaced both coolant temp sensors, the water pump, and i just replaced the thermostat last summer. My heat gauge will warm up to where it normally sets while the car is idling but when i start driving the heat gauge drops back to cold (as if the car has been parked) and my fan runs absolutely crazy the entire time my engine is running. Please help.

What temp is the coolant getting up to?
