I checked the dip stick and it is fine. I had the air plenum off the other day and had a little trouble getting it back on because of the gasket. would it leak coolant from there?

Yes, a failed intake manifold gasket could cause coolant or oil to leak internally or externally depending on which gasket (upper or lower) fails and where it is leaking.
Although it is not impossible, the upper & lower intake manifold gaskets rarely fail on the 3.4L V6 in the Equinox/Torrent. It has a redesigned upper/lower intake manifold setup than the older 3.4L V6 engines used in the Grand Am, Alero, Impala, etc. which were prone to intake manifold gasket failure.
If you have a coolant leak, it is most likely from a bad water pump that is weeping.
