Default 2012 Chevy Equinox sensor issues after engine swap

Where to begin?
Okay, so I have a 2012 Chevy Equinox that just recently underwent an engine swap (OEM crate engine) and a cat converter replacement. Why would I spend money and be upside down on this car? Easy. I still owe on it. After my experience, I'll probably never do an engine swap again.

In a matter of a week, I have received a code for P0328 (knock sensor) as well as P0328 and P0119. My temperature gauge is not reading my engine temp and my radiator fans are running after I turn my vehicle off.

Last night, I received a low oil pressure warning to turn off my vehicle. I turned if off and turned it back on, which cleared the low oil pressure and I made it home without the sensor going off.

The vehicle itself still runs fine. It seems the issues are purely electrical and sensor related and it only happened after the mechanic did the engine swap. I feel like it would be impossible that all of these sensors and the thermostat possibly went bad at one time.

Is it something I could fix myself? Has anyone had any similar problems? I obviously have an appointment set up with the mechanic again to see what the issue is. What am I dealing with here?
