Default 2005 4.8l overheated in city driving ? Why?

This morning I drove my van about 7 miles from home and the check gauges light beeped and them Temp gauge was pregged at 250 .

This was a one time only deal as it always sits about 200F and in the 4 months I have owned it nothing like that has ever happened.

So I let it cool , put some water in the overflow plastic bottle and drove it a few miles over to Walmart ,
Let it cool down for an hour there ,

Since it was pretty cool after the hour cool down , , I carefully unscrewed the plastic radiator cap and you could hear the air go in ( or was that escaping ! )
Anyway i looked down the tube and it was empty at the top of the radiator fins , but only took about 8 oz to fill it up the tube ,
so I replaced the cap and carefully drove home the 4 miles and it never went over 200F

WHY ?????

I am a little scared to drive it far if this will happen again ,
but I have no idea what to check , unless I fixed it by burping it

IDEAS ?

Maybe a small leak caused an air pocket.

Thanks, I drove around town today , its 90F plus and it never got over 200F

I guess it fixed itself ??????

I took the Van for a 100 mile round trip at 90F weather and it did not overheat again ......
