Even if the radiator fans kicks in... it could be a defective coolant thermostat or a defective water pump.
You must be shure the engine is not overheating.
There is a possibility that the PCM cancel your A/C if it reads correctly or incorrectly a high engine temp.

I'm not sure what the temp is while idling but on the freeway it's about 210.

190 to 210 F is normal range.I'd put a thermometer on it at when idling, however.

Did the tech ever tell you what the pressures were?

Unfortunately, no. He was a mobile mechanic with little AC experience but he had guages and apparently knew enough to say that they were reading right. Maybe he was BS'ing me because he didn't want to screw with it.

That's unfortunate. Makes diagnosing your issue harder. I wonder if a parts store could check the pressures? They sell cheap A/C gauges at places like Harbor Freight, for about $30 bucks,They might be close enough to work, but no professional would buy one. I suspect your pressures are OK if your A/C does get very cold, when it works.
