Question 1985 P30 5.7L - removal of emissions controls

I'm shelling out for a new factory rebuilt for my 1985 P30 Grumman 1 ton 20' step van. I am doing a full resto on the driveline with all new external components. The exhaust manifolds have been saved and I've asked for the old air pump ports to be plugged off. Everything has been cleaned and rebuilt or is new up top.
I'm pretty old school and grew up with cars from the 60s and 70s and hoping that someone can tell me what I need to leave on and what I can remove of the emissions and vacuum lines. I am converting it into a live work art studio to paint my way across the country.
I have done a general search, but I haven't seen anything about a full removal, perhaps someone can direct me to the right thread?
