Default General cooling system info needed

While troubleshooting my heater problem w/ an 03 Venture, I have a few basic questions
(assuming engine is at normal operating temp)

Concerning the bleeder valves(
(located on Tsat housing and Heater return)
Shouldn't you always get a steady stream of water from valves?

Before I bled the system, the temp needle (on temp gauge) would climb up almost to 3/4 before easing down to about half-way and start the process over again. I assume the Tstat caused this.Now it is constant @ almost half-way. Is this a result of getting all the air out of the system?

When I get all air from system, should it stay air-free?

well, main thing is, where is the gauge pointing, and do you have heat?

normally 2 bleeders, sometimes 3.

one on t stat housing and one on the intake pipe, its black and is located on the front of the engine on the left bank. runs from the front to the rear of the engine. both use a 8 mm bolt.
