Help solve overheating issue

Just a closing note.
I cleaned/rebuilt the carb and drained, refilled the coolant again. Now it's running 190 in town and on the freeway. Sitting still it climbs a little to 200, but doesn't seem to want go past that.

Ok so I bought this truck about a week ago and have since changed the thermostat and flushed/converted to green but I'm having a very odd style of overheating. I overheat after I shut the truck down. Sometimes I get up to 210 on 90 degree days but once I'm moving I'm usually fine. Bone stock 4.3 vortec. I know the fan clutch is decent as I stffed cardboard in it and it didn't slow down help me I don't want to screw the motor up. 216000 miles four wheel drive

Rising temps on a shutdown or immediately after a stop are not unusual.
Customarily, your dash gauge is very slow to reveal higher temperatures,
(attenuated response) which is intentional. GM doesn't want to upset the
owner/driver by seeing that.
But it happens on all of our vehicles.
