hi guys what the running temperature of a 305 chevy v8, is 200 to 210 too hot and what thermostat should I be running.
also what the running temp of a 327 v8 cheers.

Manually checking Thermostat activity/accuracy
I believe that 197° is the proper Temp, but...
A reading of 200 may be just a little gage error.
210 is a little high, not that you're going to boil,
given the increased temp because of pressure.
That 210 also drives the Oil Temp up, and one
wants to keep that down in the right area.
IF you have one of those Stick A/C Temp Gages
I'd do a manual check just to verify that the what
it really is, is what's being shown inside.
I'm sure you already know how to do that, but just in case...
Start Cold,
Pull the Rad Cap and you may need to siphon about an inch
of Coolant out of the Radiator.
Insert the Thermometer into the Coolant and start the Vehicle.
Allow it to come up to temp, and you can see that it's done
this, when you see a flow in the Radiator.
Periodically monitor the actual temp with the reading you're
getting on the gage inside. A digital thermometer is real nice.
You can turn on the A/C, play with the heater, just anything
to force the Stat to open and close to see if it's working ok.
Careful with this one though...
You can put a Towel/other in front of the Radiator, to drive
the temp up. BUT, watch the Coolant level and actual temp
you don't want to go much over 210 or it's going to overflow.
Then pull the restriction off, and see how fast it recovers.
If you don't see some relatively quick recovery times,
then you need to start looking for the problem.
Sluggish Thermostat, Radiator not in good shape,
Block and system need a good cleaning, like that.
While you got the Cap off, wash it off with clear water,
squeeze the spring a couple times, and make sure the
little flapper Valve is free, and the gaskets are clean.
BE SURE TO...
PUT THE CAP BACK ON BEFORE YOU SHUT THE VEHICLE OFF !
Then when it cools down you can restore the Coolant in the
Radiator and check the Reservoir for proper levels.
