Default Sbc400 thermostat

I have a 400sbc with a 180 degree thermostat. When it was 90 degrees outside and in stop and go traffic, my temperature went up to 205 degrees. If I put a 160-165 degree thermostat in, will I that help or am I kidding myself.

Yeah, it is in a jeep Comanche with an aftermarket aluminum radiator with 3 fans. I don’t know much about the engine other than it is a crate 400 with aluminum heads. I would think that they would have addressed the steam holes but who knows.
