Default low oil pressure stop engine light

(2008 Chevy Impala LT. - 3.5 liter engine.) Has approximately 170,000 miles on it.
At 167,907 miles we changed the oil using Mobil 1 - 12 month oil.
Twice now the "low oil pressure - stop engine" light has come on.
The first time was last Wednesday. (1/3/2018) When it happened, I pulled over and checked the oil. It was very low --I put about 1 1/2 quarts of oil in it and drove the rest of the way home. (about 3 miles). On Thursday, (1/4/2018) I had my wife pick up a 5 quart container of 5W30 oil and after checking the oil again, I put in 2 more quarts of oil.
I have driven it several times (once even on the highway) and the light had not come on again. I even checked the oil 1/10/2018 when I got home last night. It was full.
This morning (1/11/2018) I started out of town and the light came on again. I stopped the car and checked the oil again. It was still full.

I have a 2006 LT with the 3.9L V6 with what sounds like the same problem, it was a leaking Oil Pressure sensor.

I have a 2007 Impala that had the same problem. on the 3.5 V6. It was an oil pressure sensor going bad. On this engine the sensor is right above the oil filter. Hope this helps.
