Default 5.7 Vortec swap

I am new to this, so i'll try to keep it concise. I have a 1996 Chevy K2500 aith a Vortec 5.7. I am having tons of fun with the fuel system. I replaced the fuel pump, sending unit, and fuel filter within the last year. The engine starts and idles ok, but touch the accelerator and the engine bogs down and stalls. A friend of mine suggested swapping it with an older carburated 350. Any suggestions?

you cant swap to a carb engine unless you classify it as an offroad vehicle and then you cant have it be your daily driver. all because of emissions. and have you looked at the cats? sounds like clogged cats.

Thanks for the suggestion. As I live in FL, we don't have emissions testing to register vehicles. How can I check the cats? I've always heard that if you unbolt your exhaust from the manifold that you would wind up burning valves? Another friend thought that it could be bad O2 sensors?
