88 c1500 2wd tire help

hello guys, Im looking for some help with new tire sizes for my 88 c1500 2wd Cheyenne. I've always loved fat tires on cars and trucks and im looking at buying new rims and tires. I was wondering if I buy a new set of offset 15"(10" wide) rims, what is the widest tire I can run with stock suspension. I've been looking into the 325/50R15 Mickey Thompson ET Street Radial Tires. Will those tires fit my stock set up without rubbing?
Will they look too small?
Should I go for a 16" rim or bigger?
If i use a bigger rim will I have to go with a less wide tire?
