I have an 88 C1500 w/ stock 350.
I am rebuilding the motor and am going to use a 383 stroker kit. With every kit I have to specify whether I want a 1 piece rear main seal or a 2 piece...so my question is this:
Will either work w/ my stock block?
Which is better on a normal basis?
I am not building a racing engine or anything like that, it will just be a nice performing daily driver.

You need the kit with the right seal, they are 2 different things and NOT interchangable. The 2-piece seal is an older designe witch is prone to leaks, the 1-piece is newer an less likly to leak. An 88 should be a one piece seal unless the engine has been swaped for an older one. You need to look into the stroker kit a little more, there is a lot of grinding you must do to the block to make the crank clear. A suggestion, get the kit with 6" rods, it does have more power potential and will not weat out the block as quickly.
