Angry Stalls and no acceleration

Ok I have a 1995 Chevy K1500 pickup with a 5.0 L engine. One day I stopped for gas at the local Shell station. Not 5 minutes later my truck starting losing power and stalling at stop signs. When I tried to accelerate it would miss badly and cough and sputter. I have since changed the fuel filter and ran two tanks of new gas through it. (not Shell) It is still acting the same way. I have also changed both coolant temp sensors, replaced plugs, wires,cap, and rotor. Today I noticed that my temp gauge was reading around 220 degrees. I replaced the thermostat with a 195 degree one but the temp still remains high. When I checked for codes it was throwing two codes. One was for the PCV valve and the other was for the O2 sensor. Would either of those cause the high temp reading and the bad performance? Please help.

sounds like it might be running lean, check the 02 sensors
the lean condition can cause it to run hot

There is only one O2 sensor. The one behind the catalytic converter was removed when the new exhaust was installed a year ago. I'll try replacing the existing one. Thanks.

Thanks for the suggestion. I replaced the fuel pump and all is well.
