Default AC auto panel to manual panel 'downgrade'

I have a 2011 Yukon with RPO CJ2 auto dual climate control with rear AC. We never use the auto mode, we can't stand the button interface, and overall dislike the panel. I found a few RPO CJ3 manual dual climate control panels, and these look perfect. Simple and easy to use.
My question is, would the CJ3 panel work for me? Everyone always asks about converting from manual to auto AC from what I read; I'm going the other way. I think it would work, and all the cabin sensors would just be ignored. Or would the AC system not work because the computer isn't seeing input from the cabin sensors?
