AC Button, True Function

Some told me to crank up my ac, get the vehicle cool, and then turn off the ac via the ac button at the bottom of my control panel. Apparently the system will stay charged, and cool, and the ac compressor will not run, giving me better gas mileage. So, I tried it, and it works, but when I finished my trip, I popped the hood and saw the compressor on, though the switch was off.
With this in mind, what is the true function/nature of the switch? If the ac compressor is on, will it run 24/7 so to speak, and with it off does the compressor only go on periodically to charge the system? I'm confused.

What year is the truck? What size is the engine? As in in2pro's post the compressor will be on if the **** is in any of those positions.
