Default Cooling conundrum

I live in Utah with a lot of hills and I noticed that each time I go up a mountain my temperature gauge moves from the 12 o'clock position to the 2 o'clock position and if I'm not careful, it will go into red. I've had to keep a close eye on it to make sure I don't get the engine too hot.

I replaced the water pump and also the radiator and I also put all new coolant and but the problem still seems to occur.

I've just about come to the conclusion that this is simply how the vehicle runs but it's hard for me to swallow. How do I go about testing my electric fans to make sure they are functioning properly? In my eyes this is the last possible solution but as far as I can tell, they are working right. What do you think?

what year, engine

the fans do little to cool the vehicle over 35mph.

check that the rad shrouds are in place, no debris is blocking flow thru the new rad....clogged condenser fins. check the thermostat.

I have a 2007 suburban with the 6.0.

I replaced the thermostat last year.

When I replaced the radiator I cleaned out the condenser.

Any other ideas?

make sure the rad cap is sealing the system or the system will boil over at normal operating temperatures. the increased pressure of a sealed system increases the boiling point of the coolant by as much as 30*c

you are running 50% coolant mix or full concentrated coolant?

oem thermostat or aftermarket?
