Default 07 Silverado Overheating???

My 07 Silverado, I purchased new in May 07..new design style, 4.3 1500 2wd.
Check engine light came on around 80,000..I was told it was a fuel vapor cannister issue. Right and left upper cab corners leak water and have stained the headliner. Truck now has 166,000 miles but for the last 70,000 I keep getting this message in the odometer window that says "Engine overheating, A/C off"..the A/C shuts down and the electric fans run continuously, and the water temp gauge goes to 0..I have checked the coolant and the fluid is fine, no leaks and the motor is NO WAY over heating..If I do nothing and just keep driving it daily..the A/C comes back on and temp gauge returns to working and the fans shut down...after 2 to 3 days..or some times 2-3 weeks..IF I disconnect the battery and cycle the ignition key everything will work fine....for a while...then back to the same old problem..it is happening more often the more miles I drive it. I have read that is is NOT the water temp sensor OR the thermostat, but instead a computer issue..any ideas??
