My '04 Suburban is my daily driver
With a lot of problems of course but it is fully fonctionnal.
Wirings seem to be in good shape but all the fuses (yellow dots on the pictures) are simply not powered (tested with a test light and they are not blown
What can cause that ?

Many of the fuses don't get power until a function is activated in one the modules in the car. To test this, you can pick a particular fuse and turn on the feature that fuse is for then test the fuse for power.

Thanks for the tip, I don't feel very clever reading that but I will try tomorrow and will probably confirm my stupidity if that works :-)

No you're not. I figure this out while I was trying to find a fuse in the internal fuse block that was only on when you turn the ignition on. BTW, there aren't any in the 2007 but GM did allow for this via other mechanisms.
