what would cause a new AC Delco lower Ball joint to not take grease easily... not even sure if any went in but i was able to slowly squeeze the grease gun handle with 2 hands! Other side was also new and took grease easily.

Try screwing in a new grease fitting. I've seen individual ones in little drawers at Ace Hardware, and packs of 5 at parts stores. Note that there are different sizes of threads, so unscrew your and take it to the store with you.

I imagine you could unscrew the fitting and then put the fitting in the grease gun and pump, to see if grease makes its way through. But that could be messy !!!
