I have fine all season tires right now,
I am just trying to switch the stock rims that I have
( These are the rims that I have now, 2012 Chevrolet Tahoe 4D Sport Utility LT | Sacramento | eBay Classifieds (Kijiji) | 27422959 )
I want to get the Police rims / Steel rims / Cragar Soft 8(I will probably be getting) But I do not know which ones I am able to get.

If you cant find the wheels you want in black, it is very easy to make them black, even the factory wheels. You can just shoot them with a few coats of Plastidip you can also paint your bowties with it. It is a temporary paint that you can peel off if you want to go back to stock. but it will stick for years if you want it to. There are many youtube vids about it, you can even paint the whole car with the stuff. I did my door handles and mirrors on my truck, the black plastic was faded and this stuff gives them a nice matte finish. It really looks good on all the faded plastic on an Avalanche.

Those Tires are 8" wide, so...
you'll need to get your new Rims in a 17" diameter x 8" width.
Possibly the next time you purchase new Tires, you should consider getting the LT instead of the P. The LT's are better suited for use on our heavier vehicles.

It would be really nice, if you could get them in 8",
but 7.5" is not going to effect your control all that much.

For the bow tie, you can order new ones off of Amazon made from Billet in different colors as well as brushed and polished to swap out. I just ordered some black ones for mine and they were $70 with shipping. The front is super easy to swap and took me about 5 minutes. The back one is held on with double sided tape so there is a little more involved in swapping it, but from what I understand not too hard. I just have not had a chance to do it yet. Here is a link to the ones I bought.

Definitely cheaper, and someone may have mentioned a "stick on" before. But there's some "frosted Silver" reflective Tape which could be used in the front Bow (trim to fit) which would provide some additional notice at night. I can see that looking rather tacky, if it wasn't done right though.
