Default Temp Problems

Hoping you guys can help me out a bit. What is your suburbans normal running temp? My truck has been going up to 210 for a couple mins under normal driving then it quickly goes down to 160. I find it suprising that where its 30 degrees out the trucks getting to 210. Any ideas what the problem could be?

Figured that was it and already bought one, planned on seeing what you guys thought before I replaced it.

Turned out to be the Thermostat Replaced it today and the truck has not gone over 195. Always nice when its somthing simple.
