Default Intermittent Oil Gulper

Almost all the issues I've had with this van have been intermittent. 2008 uplander with 103,000 miles. (We bought it new) For at least the last three years it will intermittently consume large quantities of oil in a short amount of time. I have changed the oil & filter between 3,000 & 7,000 miles depending on the type of miles out on it. It always get changed before the oil monitor says it's time. I have gone 3,000 miles since the last oil change and it has used about a 1/2 quart. Which I consider pretty good. The problem is that in the next 500 miles it may use 2 - 3 quarts. I haven't been able to detect any pattern as to when it will take a big gulp. I just get that sinking feeling when I pull the dipstick and there isn't any oil on it. I just changed the spark plugs and they all looked good, without any signs of fouling. I don't see any oil in the coolant and don't ever see it puffing blue smoke. It does seem to have an intermittent miss under light load.
My list of intermittents
1. Oil Gulper
2. Missfire under light load
3. Cruise Control
4. Electric sliding doors
5. Water on the floor when using A/C - I think I have this one fixed
