5.7 TBI, Replaced coolant temp sensor, runs better but will still die when put in drive or reverse, want to check the ground for the temp sensor.
truck will turn over and idle decently. Injectors seem to be spraying as they should. I guess next test is fuel pressure?

new -
cap and rotor
Plugs and wires
Ignition coil
EGR
cleaned PCV
fuel pressure regulator
oil filter
fuel pump

A lot of sensors on the engine ground through the body of the sensor, to the engine block. That said, I think the coolant temp sensor has two pins, which most temp sensors do, as they provide a variable resistance or thermocouple type load to the computer in order to produce a reading. The sensor itself likely doesn't use ground.
