2001 Silverado AC quits cooling while driving

My ‘01 silverados ac quits cooling intermittently while driving. I can turn the engine off and back on and ac starts cooling again. Any ideas for the cause?

Is shutting it off the only way to get it to start cooling again? Does it seem to happen only during certain times, such as city vs. highway driving, hotter or cooler days?
