Default Temp gauge not working

The temp gauge goes up when I start the truck, then will go back down and sit at 160 and stay there no matter how long the truck’s been running. I replaced the coolant temp sensor twice. Maybe a wiring issue? I just don't want the truck to overheat while driving and me not be able to tell. Any help will be appreciated! The truck’s a 03 5.3 Silverado.

Will a stuck open thermostat cause the temp gauge to stay at 160??

a stuck open thermostat is one possibility for a low operating temp. it will not cause a coolant temp sensor code.
post the code
