The oil cooler has a lot of small passages, and is a restriction in oil flow to start with. Add a little stoppage of those passages from stop leak, and it could easily cause what you are seeing. Hopefully your cooler is separate and not integrated into the radiator.

If you replaces the cooler, I would try and flush the lines to it as well.
